Food Technology: Falafels

Falafels

 

Ingredients:

 

½ cup cooked chick peas

¼ small onion, finely chopped

1 clove garlic

1 tablespoon parsley chopped

1 tablespoon tahini

Pinch coriander and cumin

Vegetable oil

 

Method:

  1. Puree or mash chick peas.
  2. Add onion, garlic, parsley, tahini paste, coriander and cumin.  Mix well.
  3.  Divide mixture into small balls.  Slightly flatten.
  4.  Heat oil until moderately hot.
  5.  Gently lower felafels and cook until golden brown.
  6.  Drain well on paper.  Serve with pita bread and salad.

 

You will need to increase mixture for more than 2 people.

 

 

Tzatziki

 

1 cup Greek yoghurt

½ large cucumber, finely chopped

2-3 cloves garlic, finely chopped

Juice of ½ a lemon

Pinch of salt

1 Tbsp fresh mint (optional)

 

Mix all ingredients together.
