Food Technology: Falafels

Falafels
Ingredients:
½ cup cooked chick peas
¼ small onion, finely chopped
1 clove garlic
1 tablespoon parsley chopped
1 tablespoon tahini
Pinch coriander and cumin
Vegetable oil
Method:
- Puree or mash chick peas.
- Add onion, garlic, parsley, tahini paste, coriander and cumin. Mix well.
- Divide mixture into small balls. Slightly flatten.
- Heat oil until moderately hot.
- Gently lower felafels and cook until golden brown.
- Drain well on paper. Serve with pita bread and salad.
You will need to increase mixture for more than 2 people.
Tzatziki
1 cup Greek yoghurt
½ large cucumber, finely chopped
2-3 cloves garlic, finely chopped
Juice of ½ a lemon
Pinch of salt
1 Tbsp fresh mint (optional)
Mix all ingredients together.
